A gas drum, a bench of kraft bags and three people on Rowan Lane

Ledger Hill roasts about 40 kg of coffee every Tuesday in a brick shed behind the old cordial works in Bendigo. We named it after the ledger we still write every batch into by hand.

How we buy

Twelve coffees, bought from people we can name

Ana buys green coffee from eight producer groups and two importers, mostly the same farms each harvest. We print the price we paid on the product page, because a label should tell you that too.

  • Average paid$8.90 a kilo green, free on truck
  • Same farms as last year9 of 12 coffees

The roast week

What happens between your order and your letterbox

The same six moments every week. If a public holiday lands on a Tuesday, we roast on Wednesday and post Thursday, and say so on the label.

Roast ledger · week 42

  1. Mon09:00Green beans weighed out for Tuesday from the sacks in the back room; orders in by 5 pm join this roast.
  2. Tue06:30First batch in the drum. Eight to ten roasts of 12 kg, lightest first so the drum is never too hot for a Guji.
  3. Tue14:00Every batch cupped on the bench next to the roaster. Anything off the profile is sold as house cold brew, not bagged.
  4. Wed07:00Grinding to order, sealing, labelling. The ground-for box is ticked in pencil by whoever ran the grinder.
  5. Wed11:30The postie collects. Melbourne parcels usually land Thursday, Perth by the next Wednesday.
  6. Sat08:00The roaster door on Rowan Lane opens for bags, a free cupping at 10 and a look at the drum.

Who brews what

Three cups on the bench each morning

“A double of Ledger Blend at six, before the first batch. If it tastes flat, I change the profile, not the grinder.”

“Sumatra Gayo in the press, four minutes, no milk. Cedar and cocoa, it reminds me of my grandmother’s kitchen in Pitalito.”
